Homemade Sausage and Egg Muffins

You'll need (for 3 muffins):
3 Muffins
275gm lean beef mince
4 Eggs
1/2 an onion (or a really small onion)
3 mushrooms
1 Avocado
Salt and cracked pepper

To do this:
1. Finely chop the onion, slice the mushroom
2. Whisk the egg in a bowl, add the mince and chopped onion, and some salt and cracked pepper.
3. Combine meat mixture by hand, and form out into mince patties (thinner will cook quicker)
4. Add patties to a preheated oiled pan and sprinkle on some paprika and cracked pepper. Cook for 5-10mins (depending on the thickness) turning halfway. Add the sliced mushrooms to the side of the pan to cook concurrently.
5. Toast muffins, whilst toasting; in a separate pan fry an egg
6. Place muffin on plate ready for assemblage
7. Scoop out avocado onto each muffin, add a slice of cheese, the beef patty, mushroom, an egg and finish with some cracked pepper.

You now have your own sausage and egg muffin (and have far exceeded the typical McDonald's fare). You can enhance this offering by adding bacon, lettuce, ham, chicken, or whatever you desire!
